Lemon and tuna spaghetti

Ingredients

    g
    spaghetti
  • 50
    ml
    olive oil
  • 50
    ml
    butter
  • 1
    large garlic clove, finely chopped
  • 1
    red chilli, seeded, chopped
  • juice and rind of 1 lemon
  • 2
    tins tuna, drained, flaked
  • 100
    g
    olives, pitted
  • 30
    ml
    capers
  • handful fresh basil, rinsed
 

Method

Cook the pasta according to the package instructions until al dente. Heat the oil and butter together and fry the garlic and chilli until glossy, but don’t allow it to discolour. Add the lemon juice and grated rind.

Drain the pasta and mix it with the garlic, lemon oil, tuna, olives and capers while still warm. Sprinkle the basil over, season with salt and freshly ground pepper and serve immediately.
