Lemon and herbs rub

Ingredients

    finely chopped large garlic cloves
  • 1
    finely grated rind of lemon
  • 10
    ml
    finely chopped rosemary
  • 5
    ml
    dried basil
  • 3
    ml
    salt
  • 3
    ml
    dried thyme
  • 3
    ml
    coarsely ground black pepper
 

Method

 

Mix together garlic cloves, rind of lemon, rosemary, basil, salt, thyme and black pepper. Rub the mixture into a leg of lamb or add to stews and potjiekos for extra flavour.
