Lemon and fruit squares

    large cooking apples, cored and skinned

    mixed citrus rind
  • 125
    ml
    soft butter
  • 125
    ml
    soft brown sugar

    eggs, whisked
  • 315
    ml
    self-raising flour
  • 140
    ml
    icing sugar
  • 1
    grated rind and juice of a lemon

Preheat the oven to 180 ºC and spray a baking sheet with non-stick spray. Grate the apples coarsely and add the lemon and citrus rind. Cream the butter and sugar and beat in the eggs. Sift the flour and add to the butter mixture. Turn the mixture into the prepared baking sheet. Spoon the fruit over the dough and bake for about 20 minutes or until done. Cool. Mix the icing sugar and lemon juice and pour over the biscuit mixture in a thin stream. Cut into squares and serve with tea. Makes about 35 squares.
