Ingredients (8)

2.00 apples — peeled, cored
400.00 g mixed citrus peel
125.00 ml butter — soft
125.00 ml brown sugar — soft
2.00 eggs — whisked
315.00 ml flour — self-raising
140.00 ml icing sugar
1.00 lemon — zest and juice

Method:

Preheat the oven to 180 ºC and spray a baking sheet with non-stick spray.
Grate the apples coarsely and add the lemon and citrus rind.
Cream the butter and sugar and beat in the eggs. Sift the flour and add to the butter mixture. Turn the mixture into the prepared baking sheet.
Spoon the fruit over the dough and bake for about 20 minutes or until done. Cool. Mix the icing sugar and lemon juice and pour over the biscuit mixture in a thin stream.
Cut into squares and serve with tea.
Makes about 35 squares.
