Lemon and coconut chia seed pudding

Ingredients (7)

5 Tbs chia seeds
1/2 cup coconut milk
1/2 cup yoghurt — double cream
1 Tbs honey — raw
1 tsp vanilla — essence or seeds
1 tsp cinnamon — ground
lemon — juice only

Method:

Put the chia seeds in a jug with the coconut milk and yoghurt. Add the honey, cinnamon, lemon and vanilla.  Put in the fridge for at least 3 hours

Spoon into a glass, and sprinkle with more cinnamon and some lemon zest if you like. Serve.
