Lemon and cinnamon sugar crêpes

    flour
  • 2
    ml
    salt
  • 625
    ml
    milk
  • 15
    ml
    castor sugar
  • 3
    large eggs
  • 15
    ml
    butter for frying
  • cinnamon sugar and lemon wedges to serve
 

Method

 
In a large bowl, combine flour, salt, milk, castor sugar and eggs and mix well. Leave to stand for 30 minutes. Melt butter in a frying pan. Pour in a little of the pancake mixture to coat bottom of pan thinly. Once edges start to lift, flip pancake over and cook other side. Repeat until all the batter is used. Serve sprinkled with cinnamon sugar and with lemon wedges on the side. Serves 4
