3.00 kg mutton — leg
coriander — ground
dried thyme
cayenne pepper — pinch
salt

Method:

Pat the leg dry and leave to stand in the open until the skin is wind-dried. Cover the bone section of the leg with aluminium foil. Place the mutton on a rack or an upturned saucer on a plate and microwave for about 10 minutes on 100 per cent power. Reduce power to 30 per cent and microwave for another 45-60 minutes. Test the meat. If it is steaming hot and juicy throughout you can remove the aluminium foil and baste it with its own juices. Season to taste with coriander, thyme and cayenne pepper and sprinkle with a little salt if desired. You can use any other seasonings. Microwave the mutton for another 10 minutes on 100 per cent power and then for another 10 minutes on 80 per cent power. Allow to stand for at least 20-25 minutes.
