Ingredients (9)

75 g milk chocolate — broken into squares
3 eggs — seperated
80 g castor sugar
1 orange — zest only
25 ml orange juice
1 tsp cinnamon — ground
7 cake — slices, stale chocolate, coarsley crumbled
150 ml cream — fresh, whipped to stiff peaks

Method:

Melt the chocolate over boiling water or in the microwave. Stir continuously or at one minute intervals if melting the chocolate in the microwave oven.
Beat the egg yolks and castor sugar together until light and creamy. Add the melted chocolate and blend well.
Add the orange rind and juice, cinnamon and chocolate cake. Blend well.
Beat the egg whites until stiff and fold into the mixture. Fold in the stiffly whipped cream. Pour the mixture into a bowl and decorate with chocolate curls.
Chill until needed.
