Leek, potato and coriander soup

Ingredients

  • 200
    g
    leeks, cleaned and thinly sliced
  • 300
    g
    potatoes, peeled and diced
  • 30
    ml
    butter
  • 50
    g
    fresh coriander, chopped
  • 1
    Litres
    chicken stock
  • 100
    ml
    cream
  • salt and freshly ground black pepper
  • 100
    ml
    toasted pumpkin seeds
  • extra fresh coriander for garnishing
 

Method

Sauté the potatoes and leeks in the butter for about 5 minutes.
Add the chopped coriander and sauté for another minute.
Add the stock , bring to boil and simmer for 12 minutes.
Process until smooth and add the cream.
Season well with salt and freshly ground pepper and garnish with toasted pumpkin seeds and extra fresh coriander.
