Ingredients (14)

7.00 chicken breast fillets — cubed
250.00 g apricots — dried
500.00 g baby onion — peeled, blanched
3.00 green pepper — cubed
250.00 ml fresh chillies — 573
125.00 ml vinegar
250.00 ml chutney
1.00 garlic — cloves, crushed
1.00 fresh ginger — finely chopped
3.00 green chilli — small, finely chopped
1.00 bay leaves
5.00 ml mixed herbs
2.00 ml freshly ground black pepper — course
10.00 ml curry powder

Method:

Thread the cubed chicken, apricots, onions and green pepper on to 12 skewers and place in a flat plastic or enamel dish.
Mix the remaining ingredients and pour over the kebabs. Cover and marinate overnight. Grill over medium-hot coals or under the oven grill until the chicken is done. Baste frequently with the marinade. The marinade can also be boiled for a few minutes and served as a sauce with the kebabs. Makes 12 kebabs.
