Lebanese chicken kebabs

    chicken breasts, cubed
  • 250

    dried apricots
  • 500

    baby onions, peeled and blanched in boiling water
  • 3
    large green peppers, cubed
  • 250
    ml
    olive oil
  • 125
    ml
    vinegar
  • 250
    ml
    chutney
  • 1
    clove garlic, crushed
  • 1
    small piece fresh ginger, finely chopped
  • 3
    small green chillies, finely chopped
  • 1
    bay leaf
  • 5
    ml
    mixed herbs
  • 2
    ml
    coarse black pepper
  • 10
    ml
    curry powder
 

Method

 
Thread the cubed chicken, apricots, onions and green pepper on to 12 skewers and place in a flat plastic or enamel dish. Mix the remaining ingredients and pour over the kebabs. Cover and marinate overnight. Grill over medium-hot coals or under the oven grill until the chicken is done. Baste frequently with the marinade. The marinade can also be boiled for a few minutes and served as a sauce with the kebabs. Makes 12 kebabs.
