0.00 lamb — leg, cubed
For the marinade
0.00 fresh thyme — handful
4.00 garlic — cloves, crushed
2.00 lemon — zest and juice
300.00 ml fresh chillies — 573
100.00 ml wine — red
1.00 tsp chilli flakes

Method:

Soak the bamboo skewers in water for about half an hour. Mix together the marinade ingredients. Add the lamb cubes, toss well and leave to marinate for at least an hour.

Thread the cubes onto the skewers and braai over hot coals for a few minutes on
each side.
