Lamb souvlaki (lamb kebabs)

  • bamboo skewers
  • 1,5 kg leg of lamb, cubed
  • For the marinade
  • handful of fresh thyme leaves
  • 4
    garlic cloves, crushed
  • 2
    juice and zest of lemons
  • 300
    olive oil
  • 100
    red wine
  • 1
    chilli flakes or to taste


Soak the bamboo skewers in water for about half an hour. Mix together the marinade ingredients. Add the lamb cubes, toss well and leave to marinate for at least an hour.

Thread the cubes onto the skewers and braai over hot coals for a few minutes on each side.
