Lamb kofta wraps

    small onion, finely chopped

    minced lamb

    mild curry paste

    soft flour tortillas
  • 2
    butter lettuces, leaves separated
  • 1
    carrot, cut into thin sticks
  • 1
    small red pepper, cut into thin strips
  • SAUCE
  • 125
    g
    creamed cottage cheese
  • 200
    g
    plain yoghurt
  • 1
    bunch spring onions, finely chopped
 

Method

 
Mix onion, minced lamb and curry paste, and season well. Divide into six and roll each piece to form a thin sausage. Heat oil and cook the sausages on both sides until browned. Prepare tortillas as directed on packet. On each tortilla arrange lettuce leaf, mince kofta and carrot sticks, and fold into a parcel. Serve with creamy yoghurt sauce. SAUCE: Mix together cottage cheese, yoghurt and spring onions.
