Lamb cutlets with sweet potato mash and salsa verde

    sweet potatoes, cooked

    cream
  • 12
    lamb cutlets
  • 5
    ml
    salt and freshly ground black pepper, to season
  • 60

    olive oil, to brush
  • 2
    fresh tomatoes, sliced
  • 125
    ml
    Salsa Verde: Italian parsley
  • 125
    ml
    basil
  • 125
    ml
    mint
  • 2
    spring onions
  • 80
    ml
    extra-virgin olive oil
  • 2
    Tbs
    lemon juice

Mash the potatoes with the cream until smooth. Keep warm. Place the cutlets on a baking tray and rub with salt, pepper and olive oil. Grill until browned on both sides and cooked as desired. Grill tomato slices.

Salsa Verde: Combine the herbs, spring onions, olive oil and lemon juice. Serve the cutlets with sweet potato mash, grilled tomato slices and a dash of salsa verde.
