Ingredients (11)

800.00 g sweet potato — cooked
63.00 ml cream
12.00 lamb — cutlets
5.00 ml salt and freshly ground black pepper — to season
60.00 ml olive oil — to brush
2.00 tomatoes — sliced
Salsa Verde: Italian parsley
125.00 ml fresh basil
125.00 ml fresh mint
2.00 spring onions
80.00 ml olive oil — extra virgin
2.00 Tbs lemon juice

Method:

Mash the potatoes with the cream until smooth. Keep warm.
Place the cutlets on a baking tray and rub with salt, pepper
and olive oil. Grill until browned on both sides and cooked
as desired. Grill tomato slices.

Salsa Verde: Combine
the herbs, spring onions, olive oil and lemon juice. Serve the
cutlets with sweet potato mash, grilled tomato slices and a
dash of salsa verde.
