Lamb chops with salsa verde

  • 1
    cup
    flat leaf parsley, finely chopped
  • 1/2
    cup
    basil, finely chopped
  • 2
    tsp
    garlic, crushed
  • 1
    Tbs
    anchovy fillets,finely chopped
  • 1
    cup
    gherkins, finely chopped
  • 2
    chillies, deseeded and finely chopped
  • 2
    tsp
    dijon or wholegrain mustard
  • 2
    tsp
    white wine vinegar
  • 1
    Tbs
    lemon juice
  • 1
    Tbs
    pickling juice from gherkins
  • Salt & pepper to taste
 

Method

10 mins
 
Mix all the ingredients for the salsa verde and allow to stand for atleast 20 minutes for all the flavours to combine and ‘mingle’ a bit.

Then simply rub the lamb chops with olive oil, lemon juice and salt and grill them for about 3 minutes a side until they are perfectly pink in the middle.
