Lamb chops with salsa verde

Ingredients (11)

1 cup fresh parsley — finely chopped
1/2 cup fresh basil — finely chopped
2 tsp garlic — cloves, crushed
1 anchovy fillets — finely chopped
1 cup gherkins — finely chopped
2 fresh chillies — deseeded and finely chopped
2 tsp Dijon mustard — or wholegrain mustard
2 tsp vinegar — white wine
1 lemon juice
1 gherkins — pickling juice
salt and freshly ground black pepper

Method:

Mix all the ingredients for the salsa verde and allow to stand for
atleast 20 minutes for all the flavours to combine and ‘mingle’ a bit.

Then simply rub the lamb chops with olive oil, lemon juice and salt and
grill them for about 3 minutes a side until they are perfectly
pink in the middle.
