Lamb chops with nut stuffing

  • 4
    lamb rib chops, cut 2.5 to 3 cm thick
  • NUT STUFFING
  • 60
    ml
    chopped pecan nuts
  • 60
    ml
    butter
  • 2
    eggs, whisked
  • 250
    ml
    fresh breadcrumbs
  • salt and freshly ground black pepper to taste
 

Method

 
Cut a slit along the length of each chop.
Mix all the stuffing ingredients and use to fill the slits in the chops.
Secure with a cocktail stick and braai the chops over hot coals for 10 to 12 minutes (rare) or 15 to 18 minutes (medium).
Season with salt and pepper and serve immediately with onion marmalade.
