Lamb chops with mint

    lamb loin chops, each 2,5 cm thick
  • 5
    ml
    salt
  • 2
    ml
    pepper
  • 125
    ml
    lemon juice
  • 20
    ml
    chopped fresh mint
  • 5
    ml
    grated lemon rind
  • 1
    clove garlic, crushed
  • 125
    ml
    oil
 

Method

 
Score the fatty edges of the chops. Place the chops in a flat dish. Mix all the remaining ingredients and pour over the chops. Marinate for 4 hours, turning the chops occasionally. Heat a ribbed cast-iron pan until very hot and pan-grill the chops for about 4 minutes on each side or until done. Baste frequently with the marinade. Serves 3-6.
