Ingredients (8)

6.00 lamb — loin chops
5.00 ml salt
2.00 ml freshly ground black pepper
125.00 ml lemon juice
20.00 ml fresh mint — chopped
5.00 ml lemon — zest only
1.00 garlic — cloves, crushed
125.00 ml oil

Method:

Score the fatty edges of the chops. Place the chops in a flat dish.
Mix all the remaining ingredients and pour over the chops. Marinate for 4 hours, turning the chops occasionally.
Heat a ribbed cast-iron pan until very hot and pan-grill the chops for about 4 minutes on each side or until done. Baste frequently with the marinade.
Serves 3-6.
