Lamb chops in spicy yoghurt

    large lamb chops
  • 500
    ml
    plain yoghurt
  • 50
    g
    dried apricots, finely chopped
  • 40
    ml
    finely ground almonds or peanuts
  • 10
    ml
    ground cumin
  • 10
    ml
    ground cinnamon
  • 25
    ml
    ground coriander
  • 2
    large garlic cloves, crushed
  • 5
    ml
    cornflour
  • 10
    ml
    brown sugar
  • 1
    ml
    salt
  • 2
    ml
    ground black pepper
  • aluminium foil
 

Method

 
1. Preheat the oven to 180 ºC. 2. Arrange the chops in a baking dish large enough to hold them in a single layer. 3. Mix together remaining ingredients and pour over the chops. Cover lightly with foil. 4. Bake in preheated oven for 1 hour, or until meltingly tender. Turn the chops over halfway through cooking. Serve with boiled brown or white rice.
