Lamb balsamico

    large lamb necks
  • flour, salt and pepper
  • 45
    ml
    olive oil
  • 2
    large onions
  • 4
    cloves garlic
  • 2
    whole red or green chillies
  • 1
    orange, peel
  • 65

    balsamic vinegar
  • 1
    small stalk rosemary
  • 180
    ml
    red wine
  • 5
    ml
    sugar
  • 5
    ml
    heaped, beef stock powder
  • 375
    ml
    water
  • salt and milled pepper to taste
 

Method

 
Wipe lamb (or use 12 small necks) with a damp cloth. Dredge lightly in seasoned flour.
Heat oil in a deep, heavy-based pot. Brown lamb on both sides.
Add onions (or use 6 baby onions halved) and fry until soft.
Add garlic and fry for another minute.
Add remaining ingredients. Don't bother to chop rosemary, use it whole.
Cover and simmer over low heat for about two hours.
Delicious with tagliatelle, rice or roast potato.
