Ingredients (14)

1.00 eggs
300.00 ml cream
250.00 g margarine — or butter
50.00 ml sugar
300.00 g flour — cake
10.00 ml Baking powder
2.00 ml salt
100.00 ml golden syrup — warm
5.00 ml cinnamon — ground
45.00 ml sugar
100.00 ml dried fruit cake mix
250.00 ml pecan nuts — chopped
50.00 ml almonds — chopped

Method:

Preheat oven to 190 ºC. Grease a baking sheet.
1. Beat egg and cream until thickened, chill for a few minutes. Cream together margarine and sugar.
2. Combine the two mixtures, add flour, baking powder and salt, mix to a dough.
3. Roll dough out into a large rectangle. Spread with warm golden syrup. Sprinkle cinnamon and sugar, fruit, pecan nuts and almonds over. Roll up like a Swiss roll, pull into a full or semi circle. Make slits at intervals (using scissors) to make it easy to shape, brush with milk.
4. Place seam side down on baking sheet, sprinkle with cinnamon and sugar. Bake for 45 minutes, or until lightly browned.
5. Cool and drizzle with glacé icing, decorate with chopped nuts and cherries.
GLACÉ ICING: Mix 1 cup of icing sugar with a tablespoon of hot water to make smooth but runny mixture.
