Traditional koeksisters, drenched in vanilla and lemony syrup.

Ingredients (11)

180 g flour — cake
30 ml Baking powder
20 g butter
salt — just a pinch
150 ml milk
oil — for deep frying
For the syrup:
500 ml sugar
375 ml water
5 ml vanilla — essence or pod
2 cinnamon — stick
1/2 tsp lemon — zest only

Method:

In a bowl sift the flour baking powder and salt.
Add cubes of butter and rub into the flour until it resembles breadcrumbs.
Add the milk into the flour mix and mix until it forms a dough.
On a floured surface roll out the dough, cut into strips and plait.
Deep fry the koeksisters until they are quite brown, take them as far as you can without burning and drop into the syrup.
Allow them to cool and drain on a wire rack over a baking tray.

The syrup:

In a pan, using a gentle heat, dissolve the sugar in the water.
Simmer for 5 minutes.
Add the vanilla, cinnamon and lemon rind.
Leave overnight in the fridge.
