Kipper salad

    slices wholewheat bread, toasted
  • few lettuce leaves, well rinsed
  • half onion, sliced into rings
  • 2
    firm tomatoes, sliced into rings
  • 4
    kipper fillets, steamed till done
  • 2
    hard-boiled eggs, coarsely chopped
  • chopped parsley
  • 80
    sunflower oil
  • 50
    cider vinegar
  • salt and black pepper to taste

Place a slice of toast on each of four side plates. Arrange the lettuce leaves on top, followed by the onion and tomato rings. Top with kipper fillets and sprinkle with chopped hard-boiled egg and parsley. Blend all the ingredients for the salad dressing and pour over. Serve as a light meal. Serves 4.
