Killer shrimp

    onion, finely chopped

    frozen, cooked shrimps, defrosted
  • TO MAKE THE ROLL
  • 1
    wholewheat roll, cut open and lightly buttered
  • 5

    mayonnaise
  • 5
    ml
    wholegrain mustard few lettuce leaves
  • few lettuce leaves
  • 4
    each, slices cucumber and tomato
  • 3
    avocado slices
  • 4
    onion rings
  • a few bean sprouts
  • 5
    ml
    olive oil
  • 5
    ml
    balsamic vinegar
  • 65

    shrimp mixture
 

Method

 
Mix all the ingredients for the filling, adding the shrimps last. Chill until needed. TO MAKE THE ROLL: spread both halves of the roll with mayonnaise and mustard. Arrange the lettuce, cucumber, tomato and avocado slices, onion rings and bean sprouts in layers on the roll, season with salt and pepper and sprinkle with olive oil and vinegar. Spoon the shrimp mixture on top and add a sprinkling of shredded lettuce. Close the roll and flatten gently. Serve immediately.
