Ingredients (12)

6.00 tomatoes — medium
1.00 cucumber — large English
1.00 peppers — red or green
2.00 onions — sliced
250.00 g feta cheese — herbed
250.00 ml olives — black, drained
fresh herbs — chopped
DRESSING
120.00 ml olive oil
60.00 ml vinegar — white wine
1.00 garlic — cloves, crushed
castor sugar
sea salt and freshly ground black pepper

Method:

1. Cut tomatoes into wedges and the cucumber (unpeeled) into strips. Slice the pepper thinly and remove the pith and seeds.
2. Toss the tomato, cucumber, onions and pepper together on a platter. Break up the feta cheese into chunks and arrange this and the olives on top of the salad, sprinkling with the herbs.
3. Whisk the dressing ingredients together and drizzle over just before serving.
