Kesairi Kheer (Saffron rice pudding)

    ml
    basmati rice, soaked in water for about 30 minutes
  • 500
    ml
    full-cream milk, heated
  • 50
    ml
    sugar
  • 2
    ml
    cardamom seeds
  • 3
    saffron threads, soaked in a little water
  • 30
    ml
    raisins
  • 20
    ml
    chopped pistachios and almonds
  • 10
    ml
    extra sugar (optional)
 

Method

Drain the rice. Transfer to a saucepan and add the milk, sugar and cardamom seeds. Bring to the boil, reduce the heat and simmer for about 10 minutes over low heat or until the rice is soft and has a creamy texture. Add the soaked saffron and simmer for a few minutes until fragrant. Add the raisins.

Cool if serving cold, spoon into bowls and sprinkle with chopped Serve with extra sugar if desired.
