Kassler rib casserole

    freshly ground pepper

    ground caraway seeds
  • 1
    kg
    kassler rib, removed from the bone
  • 45

    butter
  • 15
    ml
    oil
  • 125
    ml
    beef stock
  • 250
    ml
    beer
  • 1
    bunch parsley or celery, washed and chopped
  • 1
    onion, peeled and chopped
  • 15
    ml
    tomato paste
  • 30
    ml
    flour
  • 125
    ml
    sour cream
  • salt, pepper and sugar
 

Method

1 hour
 
1. Rub the salt, pepper and ground caraway seeds into the meat. 2. Heat the butter and oil in a pan and brown the meat on all sides. 3. Pour in the stock and beer and bring to the boil. Turn down the heat and simmer, covered, for 30 minutes. 4. Stir in the chopped parsley and onion and the tomato paste and simmer, uncovered, for a further 30 minutes. 5. Mix the flour and sour cream to a paste and add to the sauce, stirring while it thickens. 6. Add salt, pepper and sugar to taste, and serve with mashed potato.
