Kassler chops with spicy peach sauce

Ingredients (9)

4.00 pork — kassler chops or gammon steaks
oil — for frying
freshly ground black pepper
SPICY PEACH SAUCE
410.00 g peaches — tinned slices, in juice
10.00 ml vinegar — white wine
125.00 ml stock — chicken
1.00 ml cinnamon — ground
2.00 ml dried chillies — crushed
5.00 ml coriander — ground

Method:

SAUCE: Drain peach slices and reserve juice.
Place 200 ml (4/5 cup) juice and all remaining ingredients in a large frying pan. Bring to boil and cook briskly, uncovered, until liquid is reduced by half.

CHOPS:Meanwhile, heat oil in a separate pan. Season chops with pepper and fry on each side for 3 minutes, or until browned and cooked.
Remove chops from pan and add to reduced peach sauce. Turn chops over to coat with sauce.
Serve with buttered boiled potatoes and green beans.
