Kassler chops with spicy peach sauce

    Kassler chops or gammon steaks
  • oil for frying
  • milled pepper
  • SPICY PEACH SAUCE
  • 410
    g
    peach slices in natural juice
  • 10
    ml
    white wine vinegar
  • 125
    ml
    chicken stock
  • 1
    ml
    ground cinnamon
  • 2
    ml
    crushed dried chilli
  • 5
    ml
    ground coriander
 

Method

 
SAUCE: Drain peach slices and reserve juice. Place 200 ml (4/5 cup) juice and all remaining ingredients in a large frying pan. Bring to boil and cook briskly, uncovered, until liquid is reduced by half.

CHOPS:Meanwhile, heat oil in a separate pan. Season chops with pepper and fry on each side for 3 minutes, or until browned and cooked. Remove chops from pan and add to reduced peach sauce. Turn chops over to coat with sauce. Serve with buttered boiled potatoes and green beans.
