    greaseproof paper or baking parchment

    fresh kabeljou fillets
  • 1
    lemon, quartered
  • 16
    black olives
  • 16
    baby tomatoes
  • 30
    ml
    olive oil
  • 60
    ml
    white wine
  • 250
    g
    fresh asparagus, trimmed
  • 4
    garlic cloves, peeled and sliced.
  • 30
    ml
    sage
  • salt and milled pepper
 

Method

 
Preheat oven to 180 ºC. Place 4 sheets of greaseproof paper, each 45 cm long, on 1-2 large baking sheets and place 1 fish fillet in centre of each sheet. Divide remaining ingredients among parcels. Fold ends of paper up and over fish, then fold in sides of paper to seal. Bake for 20 minutes. Allow guests to open parcels at the table.
