  • 500
    ml
    cake flour
  • pinch salt
  • 10
    ml
    dry mustard powder
  • 250
    ml
    butter
  • 250
    g
    Cheddar cheese, grated
  • 200
    ml
    iced water
 

Method

 
Preheat the oven to 200 °C (400 °F). Sift together the cake flour, salt and mustard powder and rub in the butter with your fingertips until well blended. Mix in the cheese and add just enough iced water to form a stiff dough. Roll out until thin and cut out circles using a large cookie cutter. Use a smaller cookie cutter to cut out the inside to make a ring. Place on a greased baking sheet and chill for about 15 minutes. Bake for 12 to 15 minutes or until golden.
