Ingredients (9)

110.00 g margarine
140.00 g sugar
2.00 eggs — extra-large
240.00 g flour — cake
5.00 ml Baking powder
salt — pinch
125.00 ml milk
200.00 g sweets — Jelly Tots
250.00 g raisins — pre-soaked

Method:

Preheat the oven to 180 ºC (350 ºF). Grease a medium loaf tin.
Cream the margarine and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition.
Sift the cake flour, baking powder and salt together. Add to the margarine mixture, alternating with the milk.
Add the jelly tots and raisins and mix well. Spoon into the prepared tin and spread evenly.
Bake for about 75 minutes or until a testing skewer comes out clean when inserted into the centre of the cake.
Turn out on a wire rack to cool.
Sprinkle 125 ml brandy over the cake to enhance the flavour, if you like.
Makes a medium cake.
