Japanese nori cones

    nori
  • 500
    ml
    short-grain rice
  • 750
    ml
    water
  • 65
    ml
    rice vinegar
  • 65
    ml
    sugar
  • 10
    ml
    salt
  • soy sauce
  • pickled ginger
  • wasabi paste
 

Method

1.5 hrs
 
Halve nori sheets diagonally and roll into cones.
Secure each with a toothpick.
Soak rice in cold water to cover for 1 hour and drain well.
Place rice and 750 ml (3 cups) water in a saucepan and bring to boil.
Reduce heat and simmer until water has all been absorbed by rice, 10 to 15 minutes.
Cool slightly, then stir in vinegar, sugar and salt.

Fill nori cones with rice and a variety of fillings of your choice: cucumber, cooked prawns, avocado pear, asparagus, salmon trout, watercress.
Serve with soy sauce, pickled ginger and wasabi paste.
