    olive oil
  • 1
    onion, chopped
  • 1
    green pepper, chopped
  • 15
    ml
    crushed garlic
  • 5
    ml
    Cajun spice
  • 2
    ml
    ground turmeric
  • 5
    ml
    dried origanum
  • 250
    ml
    uncooked rice
  • 750
    ml
    fish or chicken stock
  • 15
    ml
    tomato paste
  • 450
    g
    seafood mix, defrosted
  • 30
    ml
    freshly chopped parsley
 

Method

30 minutes
 
Heat the oil in a large frying pan and fry the onion, green pepper and garlic for two minutes.
Add the spices and cook for a further three minutes.
Add the rice and stir rapidly, so that the spice mixture coats the rice.
Pour in the stock and bring to the boil.
Add the tomato paste and simmer gently until the liquid is absorbed and the rice is tender.
Add the seafood and parsley, cover and cook for a further five minutes. Season to taste and serve hot.
