Ingredients

  • BATTER
  • 375
    ml
    cake flour
  • pinch salt
  • 12
    ml
    baking powder
  • 1
    extra-large egg, whisked
  • 200
    ml
    water to form a stiff batter (approximately)
  • 6
    slices white bread, crusts removed
  • smooth strawberry jam
  • oil for deep-frying
 

Method

 
Mix the dry ingredients for the batter and add the egg and water. Mix until smooth. Spread three slices of bread with a thick layer of strawberry jam. Place the other three slices on top. Quarter each sandwich to make 12 triangles. Dip each triangle in the batter and deep-fry till golden brown. Drain on paper towelling. Serve hot or cold, with custard, if desired. Makes 12 triangles.
