    butter
  • 60
    ml
    castor sugar
  • 5
    ml
    vanilla essence
  • 500
    ml
    cake flour
  • 60
    ml
    cornflour
  • 2
    ml
    salt
  • 50
    ml
    apricot jam
  • icing sugar for dusting
 

Method

 
Preheat oven to 180 ºC. In a large bowl, beat butter and castor sugar until light and fluffy. Beat in vanilla essence. Sift flour, cornflour and salt together and blend into beaten mixture until a soft consistency is attained. Roll into walnut-sized balls and make a hollow in centre of each. Drop a little jam in each hollow. Place on a lightly greased baking sheet and bake for 15 minutes, or until light golden. Cool on baking sheet for a few minutes, then cool completely on a wire rack. Dust with icing sugar before serving.
