    white sugar

    extra-large eggs

    sweetened Nestlé condensed milk
  • 1750

    cake flour
  • 35
    ml
    baking powder
  • 7
    ml
    cream of tartar
  • pinch salt
  • 125
    ml
    smooth apricot jam
  • 250
    ml
    coconut
 

Method

 
Preheat the oven to 180 ºC and lightly butter a few baking sheets or spray with non-stick spray. Cream the butter and sugar together until light and fluffy. Add the eggs one by one, beating well after each addition. Add the condensed milk, beating until well blended. Sift the cake flour, baking powder, cream of tartar and salt together. Add to the butter mixture and mix to form a dough. Roll into small balls and arrange on the prepared baking sheets. Using the back of a wooden spoon handle, press a hole into each cookie and fill with a little jam. Sprinkle with coconut and bake for 12 to 15 minutes until pale brown.
