Italian tomato summer salad

    tomatoes
  • 2
    heads garlic
  • 250
    ml
    olive oil
  • 12
    basil leaves
  • 12
    large black olives, stoned and lightly crushed
  • salt
  • freshly ground black pepper
 

Method

 
Preheat oven to 180 ºC. Place tomatoes and garlic in a baking dish. Bake for 15-20 minutes, or until tomato skins burst. Separate garlic cloves and peel them. Place tomatoes and garlic in a bowl and add olive oil, basil leaves, olives and seasoning. Refrigerate until cold. Serve with crusty bread. Serves 4.
