Italian tomato and cheese salad

  • cheese, thinly sliced
  • tomatoes, sliced
  • DRESSING
  • 80
    ml
    olive oil
  • 15
    ml
    balsamic vinegar
  • 45
    ml
    freshly chopped parsley
  • 30
    ml
    each chopped chives and basil
  • 1
    garlic clove, crushed
  • 2
    ml
    paprika
  • salt and black pepper to taste
 

Method

 
Using a vegetable parer, cut thin slices of cheese and arrange, alternating with tomato slices on a large serving platter. SALAD DRESSING: Blend all ingredients together until smooth. Pour over the salad, cover and chill for about 1 hour before serving. Sprinkle with extra basil for garnishing.
