Italian-style tuna

    large, ripe tomatoes
  • 10

    sugar
  • 400
    g
    white beans, drained
  • 1
    onion, thinly sliced
  • sea salt and milled black pepper
  • 2
    tuna in oil
  • 60
    ml
    olive oil
  • 30
    ml
    good-quality wine vinegar
  • fresh parsley, chopped
 

Method

 
Slice tomatoes and sprinkle with sugar. Cover with drained beans and half the thinly sliced onion. Sprinkle with sea salt and milled black pepper. Drain cans of tuna in oil, flake coarsely and use to top beans. Sprinkle remaining half of the onion over tuna, spoon over olive oil and about wine vinegar. Sprinkle generously with fresh parsley.
