    pasta spirals, boiled, drained and rinsed under cold running water

    chickpeas, drained
  • 15
    cherry tomatoes, halved

    English cucumber, diced
  • 5
    spring onions, chopped
  • 1
    red pepper, diced
  • 225
    g
    feta cheese, diced
  • SALAD DRESSING
  • 100
    ml
    olive oil
  • 80
    ml
    balsamic vinegar
  • salt and freshly ground black pepper
  • 65
    ml
    chopped fresh parsley
 

Method

 
Mix all the salad ingredients together in a large salad bowl and pour over the olive oil and balsamic vinegar. Season generously with salt and black pepper and stir in the chopped fresh parsley. Serve at room temperature. Serves 6.
