Ingredients (9)

250.00 g butter — unsalted, soft
250.00 g castor sugar
1.00 lemon — or orange, zest only
5.00 eggs
210.00 g flour — cake
70.00 g cornflour
12.00 ml Baking powder
10.00 plums — hlaved, stoned and sliced
60.00 g castor sugar

Method:

Using a wooden spoon or hand beater, beat butter, sugar, grated lemon or orange peel, eggs, flour, cornflour and baking powder for about 1 minute, or until smooth.
Spread into a buttered, floured 30 x 20 cm ovenproof dish and arrange plum halves, cut side up, on top (they will sink as cake cooks and end up underneath).
Bake at 180 ºC, for 1 hour, or until golden and springy to the touch and a skewer inserted in centre comes out clean.
Sprinkle with castor sugar and serve warm with lots of thick cream or fromage frais.
