Italian pick 'n mix

    large tomatoes, sliced
  • salt and freshly ground black pepper
  • 8
    sprigs of fresh basil
  • 30

    olive oil
  • 8
    slices Parma ham
  • 425

    sugar beans, drained

    fresh parsley, finely chopped
  • 1
    lemon (juice only)
  • 125

    black olives
  • 410

    artichokes, drained
  • 225

    mozzarella cheese, sliced
  • Italian bread sticks, to serve
 

Method

 
Divide the tomato slices between 4 plates. Season with salt and freshly ground black pepper, scatter with basil leaves and drizzle with the olive oil. Arrange 2 slices of Parma ham on each of the 4 plates. Mix the beans with the chopped parsley and lemon juice and then spoon the mixture on to each plate. Carefully arrange the black olives, artichokes and slices of mozzarella cheese into separate piles on each plate. Serve with Italian bread sticks. Serves 4.
