Italian onion bread

    sugar
  • 10

    instant yeast
  • 450

    onions (red, if available)
  • 50
    g
    unsalted butter
  • salt and pepper
  • large sprig fresh rosemary
  • 15
    ml
    coarse salt
 

Method

 
Preheat oven to 200 ºC. Place flour and yeast into a food processor, using the dough hook on lowest speed, add enough water to make a smooth, elastic dough (about 5 minutes). Cover with a damp cloth and leave to rise until doubled in size. Fry the onions in butter as slowly as possible until they soften. Season with salt and pepper. Knead risen bread briefly and roll into a sausage shape. Transfer to a greased cake tin with a hole in the middle. Pinch ends together. Cover the dough again and allow to rise for about half an hour. Spread onions on top of the dough and stick in rosemary. Scatter coarse salt over the top. Bake for 30 minutes. Makes 1 loaf.
