Italian bread salad

Serving Change
  • 4 slices of two-day old ciabatta bread, grilled and cut into cubes
  • 4 ripe tomatoes, chopped
  • 2 red peppers, roasted and chopped
  • 30 ml capers
  • 2 garlic cloves, crushed
  • 4 anchovy fillets, chopped
  • 16 plump balck olives, squashed to remove pips
  • 60 ml red wine vinegar
  • 90 ml extra virgin olive oil
  • 250 fresh basil leaves
  • salt and freshly ground black pepper


Mix everything together and serve at room temperature.
