Italian bread salad

Ingredients

    loaf country bread, French bread or stale white bread
  • 1
    clove garlic, peeled and halved
  • 6
    ripe tomatoes, cubed
  • 1
    yellow pepper, seeded and cubed
  • 125
    g
    mangetout or baby corn, cut into thirds
  • 0.50
    red or white onion, thinly sliced
  • 25
    ml
    freshly shredded basil leaves or chopped parsley
  • 200
    g
    mozzarella, feta or other cheese, cubed
  • olive oil and balsamic vinegar, to serve
 

Method

5 minutes
 
Cut the bread into slices lengthways and place under the grill and grill both sides until light golden brown.
Remove from the grill and rub each slice of bread with garlic.
Cut the bread into small cubes.
Place the bread in a large salad bowl and add the remaining ingredients.
Drizzle liberally with olive oil and balsamic vinegar.
Season to taste and toss well. Leave to stand for 15 to 20 minutes before serving.
