Italian bean bake

    frankfurters, sliced
  • 30

    butter

    oil
  • 250
    g
    chicken livers, cut into small pieces
  • salt and pepper to taste
  • 2
    onions, sliced
  • 2
    cloves garlic, crushed
  • 500
    g
    stewing mutton
  • 5
    ml
    mixed herbs
  • 70

    tomato paste
  • 250
    ml
    chicken stock or hot water
  • 500
    g
    cooked speckled beans
  • 5
    ml
    basil
 

Method

1.5-2 hours
 
In a large pan, fry the sliced Frankfurters in a little heated butter and oil until browned. Remove from the pan and set aside. Season the chicken livers to taste with salt and pepper and fry in the same pan until brown on the outside, but still slightly pink inside. Remove from the pan and add to the frankfurters. Sauté the onion and garlic in the oil in the pan until soft. Season the stewing mutton well with salt and pepper and mixed herbs. Add to the onion mixture and fry until browned. Blend the tomato paste with the chicken stock and add to the meat mixture. Reduce the heat and simmer until the meat is tender. Add the cooked beans, sausages and chicken livers. Simmer until the dish is heated through. Add more hot water if necessary. Season with basil and extra salt and pepper if necessary. Serve with rice or fresh bread and a salad. Serves 6.
