Island-style fish (wheat-free)

    small ripe banana, mashed
  • 5
    ml
    fresh grated ginger or ginger paste
  • 15

    curry paste (or use 10ml curry powder)
  • 15
    ml
    fruit chutney
  • 30
    ml
    mayonnaise
  • 125
    ml
    coconut milk
  • 4-6
    fish steaks
  • juice from one lemon
  • 50
    ml
    butter
  • lemon slices, to serve
  • salad and baby potatoes, to serve
 

Method

Mix together all the ingredients except the fish, lemon juice and butter. Add 15ml lemon juice. Set aside in the fridge to chill.

Place the fish on a baking tray and drizzle with the remaining lemon juice. Season to taste. Top each piece of fish with a dollop of butter and cook under a hot grill. Turn after three to five minutes (depending on how thick the

fish is). Add a little more butter and grill the other side. The fish is done when it flakes easily.

Serve hot with lemon slices and the prepared sauce. Accompany with salad and baby potatoes.
