Irish pork stew

Ingredients (20)

6 sausages — pork
4 garlic — cloves, finely chopped
125 g bacon — finelt chopped
4 Tbs fresh chillies — 573
2 onion — sliced
2 celery stalks — finely chopped
2 carrots — large, chopped
2 tsp mustard — seeds
mustard — powder
30 g flour
3 g potatoes — large, peeled
cut in quarters
50 tomato paste
1 tsp lemon juice
1 tsp vinegar — balsamic
2.5 cup stock — beef
1/2 cup beer — lager
2 Tbs fresh parsley — chopped
1 Tbs fresh sage
1 Tbs black peppercorns

Method:

Preheat the oven to 180°C. Brown the sausages in an oven proof dish with 2T olive oil. Remove and set aside.

Fry the bacon and remove once cooked. Add the other 2 T oil and fry the onions until golden brown.

Add carrots and celery and garlic. Sauté until translucent.

Add 30 g flour, and cook for a minute or two before adding all the other ingredients into the dish.

Put the lid on and bake for 1hour.

Serve with fresh bread.
