Irish pork stew

    pork sausages
  • 4
    garlic cloves finely chopped
  • 125

    bacon - finely chopped
  • 4

    olive oil
  • 2
    onions – sliced
  • 2
    celery sticks – chopped finely
  • 2
    large carrots – chopped
  • 2
    tsp
    mustard seeds – if you don't
  • have just add 2t mustard powder
  • 30
    g
    flour
  • 3
    g
    large potatoes – peeled and
  • cut in quarters
  • 50
    tomato paste
  • 1
    tsp
    lemon juice
  • 1
    tsp
    balsamic vinegar
  • 2.5
    cup
    beef stock
  • 1/2
    cup
    lager
  • 2
    Tbs
    chopped parsley (optional)
  • 1
    Tbs
    fresh sage (optional)
  • 1
    Tbs
    black pepper corns
 

Method

Preheat the oven to 180°C. Brown the sausages in an oven proof dish with 2T olive oil. Remove and set aside.

Fry the bacon and remove once cooked. Add the other 2 T oil and fry the onions until golden brown.

Add carrots and celery and garlic. Sauté until translucent.

Add 30 g flour, and cook for a minute or two before adding all the other ingredients into the dish.

Put the lid on and bake for 1hour.

Serve with fresh bread.
