1.00 instant mashed potatoes
250.00 ml onion — chopped, fried
250.00 ml bacon — diced, fried
250.00 ml cheddar cheese — diced
5.00 ml mustard — powder
salt and freshly ground black pepper — to taste
6.00 eggs — seperated

Method:

1. Preheat oven to 180 ºC.
2. Make instant mashed potato as directed, be sure to keep it stiff.
3. Add onion, bacon, cheese, mustard powder or garlic salt, salt and pepper.
4. Add beaten egg yolks.
5. Beat egg whites to soft point stage and fold into potato mixture.
6. Pour into soufflé dish and place in oven pan half-filled with warm water (bain-marie). Bake for about 45 minutes.
7. Serve immediately with tomato salad or a green salad.
