Instant ginger truffles

  • 300
    g
    chocolate, broken into squares
  • 200
    g
    ginger biscuits, roughly broken
  • 1
    ml
    ground ginger
  • 5
    ml
    vanilla essence
 

Method

 
Melt the chocolate in a glass bowl over boiling water or in the microwave oven, stirring until melted. Stir in the ginger biscuits, ground ginger and vanilla essence and mix well. Drop teaspoonfuls of the mixture into small paper cups and chill until firm. Makes about 42 truffles.
