    chickpeas, drained

    pimientos

    chopped
  • Italian or ordinary parsley
  • 1
    lemon, juice
  • 125
    ml
    olive oil
  • 1
    green chilli, seeded and chopped
  • 2
    cloves garlic, crushed
  • salt and milled black pepper
  • 2
    ml
    sugar
 

Method

 
Place chickpeas, pimientos and parsley in a serving bowl. Mix remaining ingredients together to make a dressing, toss into the salad and serve with crusty bread as a light lunch or supper, or as a side salad with Mediterranean dishes, or as part of a buffet.
