Ingredients (10)

820.00 g chickpeas — tinned and drained
390.00 g pimento peppers
45.00 ml dates — chopped
fresh Italian parsley
1.00 lemon juice
125.00 ml fresh chillies — 573
1.00 green chilli — seeded and chopped
2.00 garlic — cloves, crushed
salt and freshly ground black pepper
2.00 ml sugar

Method:

Place chickpeas, pimientos and parsley in a serving bowl.
Mix remaining ingredients together to make a dressing, toss into the salad and serve with crusty bread as a light lunch or supper, or as a side salad with Mediterranean dishes, or as part of a buffet.
