Indian-style masala fish

  • 4
    fish fillets of your choice
  • 45
    ml
    masala spice for fish
  • 5
    ml
    sugar
  • 22
    ml
    freshly squeezed lemon juice
  • 30
    ml
    olive oil
  • salt and milled pepper
 

Method

 
Wipe fish with a damp cloth.
Mix remaining ingredients together to make a thin paste.
Rub mixture over fish.
Heat a non-stick pan with a little olive oil or cooking spray.
Cook fish, presentation side down for three to five minutes.
Turn, cover with a lid or a large sheet of foil and cook for a further five minutes, depending on the thicknss of the fish.
This method is called steam-frying and is the best way to avoid over-cooking the fish.
