    courgettes, sliced into rings

    fresh parsley, chopped
  • salt and freshly ground black pepper to taste

    flaked almonds, toasted
 

Method

 
Place the oil and onion rings in a glass bowl and microwave on HIGH (100 per cent power) for 2 minutes. Add the curry powder and microwave for about 1 minute on HIGH (100 per cent power). Spoon the onion mixture into a casserole dish and add the rice, chillies, coconut, vegetable stock and lemon juice. Cover and microwave for 3 minutes until boiling hot. Add the raisins and microwave for 12-14 minutes on MEDIUM (70 per cent power). Add the peas, courgettes and parsley and microwave for about 2 minutes on MEDIUM. Season to taste with salt and freshly ground black pepper. Sprinkle with toasted almonds just before serving. Serves 4-6.
